Juicy Meat Everytime!

We are back again! This time with our own Execitive Chef, Jeffrey Selvig, who recieves rave reviews about the food he prepares from the Hotel Pere Marquette.

"This brining technique which is very easy to do, will change the way you feel about pork! I use a brine here at the hotel for several dishes. Brining is a technique that is as older than father cookery himself “Escoffier”. Brining will help turn out chops that are never dried out, hard and tastless. It can be used on pork loin as well for the juiciest roast you have ever served. Chicken is also a great protein to brine, especially before preparing your chicken for frying.

Step one: Dissolve salt in water. ¼ cup of table salt to 8 cups of water is the ratio

Step two: Cool the brine to refridgerator temperature (this is important because brine works differently when its warm.

Step three: Put your meat in a ziplock bag and pour enough brine in to cover it. Place the package in the fridge for 3-4 hours

Step four: Remove the meat and pat it dry and proceed with your recipe

Tip……..I like to add pepper or seasoning to the brine sometimes too but it is not necessary!"

Pet Traveling Tips

BASIC TRAVEL TIPS
- Tag pets’ collar with your info and info where you can be contacted once you arrive to your destination.
- Contact an on site rep. of the place you will be staying to find out if their pet polices have changed.
- Have a current copy of your pet’s health certificate handy.
- Get your Veterinary’s phone number in case of emergency.
- Be sure to pack these essentials: Pet bowls, food, toys, leash, waste bags and an item w/ the scent of home.
- Know the breed of your pet, as some breeds do not handle certain climates or environments well.

AIR TRAVEL
- Clearly tag the pet carrier with your info and info where you can be contacted once your flight has arrived.
- Freeze water and allow it to melt over time in your pets’ cage.
- Use direct flights.
- Carry a current photo of your pet.
- Always be on the same flight as your pet.

CAR TRAVEL
- Stop every 2-3 hours to let your pet strech.
- Don't let your pet put their head out the window, as dirt and dust can get into their eyes and cause infection.
- Give them water at the begining of the break.

It is always better to deal with a person. The nicer you are the more they will try to full fill your special requests!

4. Ask About Complimentary Amenities

A slightly higher rate at one hotel may be worth the extra free amenities – if you will use them.

5. Visit During the Off Season
Depending on if the area is more for vacation or business you can score a huge discount! A vacation area is better during the week and for business areas weekends are best.

6. Ask for a Discount if You Need A Lot of Rooms
If you are booking rooms for a family gathering or group function this will help you get this discount if enough rooms are booked.

7. Subscribe to the Hotel’s E-Newsletter
Hotels send out e-mails about their specials, promotions and sometimes attach additional discount coupons! Sign up for our E-Newsletter.

8. Ask about Hidden Charges
